Pavie, Pavie, Pavie situated in the South east of the town of Saint-Emilion covering 37 hectares. Here we have a new blockbuster wine, small production and significant ratings from the leading critics. Over the last 10 years the brand is starting to grow and demand is increasing worldwide. In 2005, Chateau Pavie officially announced the release of a second label under the name of ‘Aromes de Pavie’ (production 2,500 cases) , which replaces ‘Tour Simard’ for easier recognition amongst the consumers of Perse’s wine range.

Chateau Pavie has diverse terroirs, limestone plateaus composed of clay-limestone soil on an asteriated limestone subsoil. Located at an altitude of approximately 85 metres above the Dordogne River. Many of the plots have been replanted. Most of the work in the vineyard is carried out by hand. Green harvesting leaf thinning takes place to produce a special character in the wine. Perhaps this is what lead to one of the most iconic critics in the world of wine making the below statement about the 2000 vintage.

Just beginning to come around and strut its enormous potential, this wine at age 15 has been evolving like a glacier. The wine has an inky, opaque, plum/purple color and a stunningly rich nose of mulberries, bramble berries, blackberries, licorice and incense as well as touches of toast and graphite. Fabulously concentrated and full-bodied, with a multidimensional mouthfeel, this profound Pavie is in mid-adolescence. It should evolve and continue to drink well for at least another 30-40 years. This is clearly the first compelling effort made by the Perse family.

There is no fining or filtration. The resulting wine has been considered one of the superstars of Bordeaux since 1978……’
